News from Cascadian Terrace: Creative Cooking

This spring, Cascadian Terrace Apartments in Portland, OR, invited two local cooking professionals to share ideas for healthy creative meals on a budget. Each teacher was offered a four week sequence, and recipes were uniquely designed based on the offerings in the monthly food boxes some residents receive, combined with fresh fruits and vegetables. It is a popular and lively class with students sharing a meal that they prepare together. A particular favorite was homemade bread with potato leek soup!
